Sumatra Gayo Mountain *Special Process*

This coffee undergoes a special drying process, where the skin of the coffee cherry is pulped on the farm, but the mucilage, parchment and silverskin remain intact. It is then dried and transfered to a central mill (Gayo Mountain) where it undergoes further drying. The mucilage and parchment layer are finally removed and then careful hand sorting to remove immature beans begins.

In the cup this coffee is deep dry chocolate fragrance and winey fruit with sandlewood and clove throughout the finish.

SHO•SHIN Single Origin Espresso - Brazil

John Says...

Shoshin is a Japanese concept found in Zen and the martial arts. It means "beginner's mind". Pure. Open to new experiences.

There are many beans out there that can make a great Single Origin Espresso, but not all beans have the necessary elements. As this coffee and espresso journey continues, I will be offering a selection of beans whose origin characteristics can be showcased as Single Origin Espresso. I hope you will join us on this taste adventure with our first offering from Brazil.

This Brazilian offering comes from a small Micro-Region in the highlands of Cerrado, Brazil and consists of Bourbon, Mundo Nova, and Catuai cultivars which undergo a special raised-bed screen drying process at one milling station.

silly cups

Yiching says--

We use these thinner and softer cups for our iced drinks at the caffe that can be sealed on the top (so we don't need to use lids) and more eco-friendly.

We love these cups, but because they are softer, we'd see some silly ones once in a while...

funky cup

Of course we don't use them on customers. We put them away and use them ourselves.

At least they are still sealable, and are unique and sorta cool looking.

Roaster's Choice 081107 Brazil Moreninha Formosa

This is a remarkable coffee for two reasons:
1) The African raised bed (screen) drying process is used which brings a remarkable fruited note to this thick bodied chocolate tasting coffee.

This encourages higher quality production and a higher quality cup.

Pamama Esmeralda has taken first place in every Best of Panama competition it has been in, and once again, this year is no different. Last years crop commanded $53 per pound green; this years first place offering went for $130 per pound. Yes One-Hundred-and- Thirty Dollars per pound green!

pa2007

Is this coffee worth it? In a word, yes.

You can see the final auction results here.

While there is a huge gap between this coffee and the others in the competition, the limited offering (just 500 pounds) and the brilliance in the cup created fierce competition for this remarkable coffee. We will all wait with giddy anticipation to see what the auction winners have planned for this years Panama Esmeralda.
