El Salvador Finca Matalapa - Bourbon

This season's El Salvador Finca Matalapa - Bourbon is back! We currently have a small batch that's roasted and ready, and we also have it On Siphon!



This is 100% Bourbon offering from Finca Matalapa. Finca Matalapa is a 4th generation family farm founded in the late 1800s by Fidelia Lima. The farm covers 14 acres of beautifully managed coffee shrubs with nearly 40 varieties of tress providing shade. Their passion and expertise shines through in the cup.

In the cup it's warm caramel and almond with apple, pear, and hints of citrus as it cools. Bittersweet cocoa background. Delicious!

El Salvador Majahual - La Montana

Fresh out of the roaster and available Whole Bean at caffe d'bolla right now - El Salvador Majahual - La Montana.

This is 100% Bourbon coming from 60 to 80 year old trees! These trees have retained production from branches at all levels due to the knowledge the locals have gained about farming methods. This proves the long-term value and continuous production that can be gained from traditional techniques vs. hybrids that fail after 10 years.

In the cup it's almond, cocoa, and semi-sweet chocolate with a raw sugar-caramel sweetness. Creamy mouthfeel. Classic.

El Salvador Finca Siberia - Bourbon

We've featured this wonderful Single Origin coffee from Finca Siberia a few times, and here it comes again... the 3rd and final batch of the season, fresh out of the roaster at caffe d'bolla: El Salvador Finca Siberia - Bourbon.

This coffee is a 100% Bourbon offering from one of the best, most prolific coffee areas in Santa Ana. This 4th generation farm sits at 1450 meters and is run by the Silva family. The name Siberia refers to the chaotic weather at this altitude and inaccessibility of the farm in the past. This coffee has placed in the Cup of Excellence several times. Consistently amazing.

In the cup it's nut and malt sweetness with soft orange accents. Marzipan notes as it cools. A fantastic Bourbon.

El Salvador Finca La Montanita - Bourbon

Fresh out of the roaster, and on the siphon - El Salvador Finca La Montanita - Bourbon.

La Montanita is a small farm located in the Alotepec Mountains. It has been passed down through the Aguilar family. Their detailed, hands=on approach has produced an amazing coffee that has placed in the top 3 in the Cup of Excellence multiple times.

In the cup it's plum, grape, and winey berry notes with a dark, caramelized sugar sweetness. That's a Bourbon! Simply outstanding.

El Salvador Finca Matalapa - Naranjo

On the Siphon and also available Whole Bean today we have El Salvador Finca Matalapa - Naranjo!

Finca Matalapa is a 4th generation family farm founded in the late 1800s by Fidelia Lima. The farm covers 14 acres of beautifully managed coffee shrubs with nearly 40 varieties of trees providing shade. Everything on the farm is a result of their passion, and it shines through in the cup.

In the cup it's almond and hazelnut with orange peel and praline sweetness with hints of plum and sweet lemongrass. Matalapa delivers again! Spectacular!

Espresso - El Salvador Majahual Tablon Tempisque



Our Espresso On Tap, and available for home-use right now is El Salvador Majahual Tablon Tempisque.

This espresso from a Tablon, or plateau within Majahual located at 1600 meters. This lot is comprised of both local Bourbon types as well as 50-80 year old Bourbon trees that produce amazing coffee fruit because of the long-term traditional farming techniques being used. This has been roasted with two distinctly different profiles and post-blended to increase complexity.

In the cup it's honey and gingerbread notes, with a bright apple and plum sweetness. A wonderful Single Origin espresso.

El Salvador La Divina Providencia

We currently have this wonderful coffee available both Whole Bean and on the siphon!

This farm, situated at 1600 meters, was purchased about 9 years ago by Robert Ulloa. It was in poor condition when he bought it. He saw potential and made several quality improvements. He replanted coffee-shrubs and built his own traditional wet-mill for processing. The cup quality shines through, and that is what makes this an attractive coffee.

In the cup it's orange and mandarin orange elements with citrus floral notes and a honey-caramel sweetness that emerges as the cup cools. A stellar cup!

El Salvador Santa Ana Naranjo

Today we have a Single Origin El Salvador Santa Ana Naranjo available. This is a lot from the El Naranjo area of Santa Ana, El Salvador. This coffee is brought as fresh=picked cherry from Naranjo to the CuatroM Mill near Las Cruces for processing. They use both modern and traditional techniques to ensure quality fruit selection and clean, economical, and ecologically sound processing.

In the cup it's hints of red and green apple, hazelnut, and milk chocolate. A wonderfully balanced and nuanced cup.

This 100% natural processed Bourbon hails from the Northernmost area of El Salvador. It is a SHB (strictly hard bean) and it's density translates to the cup. Whether roasted to City+ or a Full City Roast, this coffee is sweetness in the cup.



A naturally syrupy body with nut and balanced fruit tones layered within a mild bittersweet chocolate. Darker roasts accentuate the bittersweet chocolate tones, while a lighter roast will present a greater balance between bright and bittersweet.

José Antonio Salaverria uses a “natural process”, much like the Brazilian method on this El Salvador Bourbon coffee.


This coffee begins with bold honey in the cup followed by a hint of pear and almond highlights on top of a deep chocolate. A remarkable cup.

El Salvador Orange Bourbon

This coffee comes from El Molino de Santa Rita and is a spontaneous mutation which gives the ripened coffee cherries their orange color.

This is a new take on your typical Central American coffee. This wet-processed coffee is the perfect balance between orange sweetness and a classic bittersweet chocolate Bourbon (bore-bone) to complete the cup.

This coffee is available fresh roasted by the pound at the caffe!
